Cookies can be hard for me.
Literally.

Unless they are fresh from the oven, a lot of the time my cookies end up too hard.
That is so frustrating to me! So, when I read this recipe that said that these cookies stay soft I wanted to try it. Last night we gave it a try.
Today, they are just as soft as when I pulled them out of the oven.
Yay!
And they taste very yummy too.
Pudding Cookies
Ingredients:
4 1/2 c. all-purpose flour
2 t. baking soda
1-1/2 c butter (3 sticks) softened
1-1/2 c. brown sugar, packed
1/2 c. white sugar
2 (3.4 oz.) pkgs. instant vanilla pudding
4 eggs, room temp
2 t. vanilla extract
4 c. of add-ins
( like chocolate/peanut butter/white chocolate chips, candy bars, m&m's, nuts, etc.)
Preheat oven to 350 degrees.
Stir together flour and baking soda in separate bowl and set aside;
In a large bowl, cream butter, brown and white sugar. Beat in pudding mix until well blended. Stir in the eggs and vanilla. When smooth, slowly add in the flour mixture. This can take a little while, but make sure it's well incorporated into mix.
Finally, add the "fillers".
Scoop onto baking pan - I used a medium Pampered Chef scoop.
Bake 8-12 mins
I baked mine the full12 and they are still super soft.
We added Oreos - Alyse's choice, but I think that they would make great chocolate chip cookies.
I like how you can be creative with the add ins.

Yum!! I love making cookies with pudding mixes...they always turn out great. Many years ago I got a tip to put a piece of bread in the container with your fresh cookies -- it keeps them soft! The next day the bread will be dried out and hard, but the cookies stay soft. I always stick a slice in with my chocolate chip cookies :)
I've done that bread thing before. My mom always did that. I have also heard that marshmallows do the same thing - but I haven't tried that. I love cookies, but I am learning that brownies and cupcakes are more of my specialty. I kinda would rather just eat the cookie dough. :)
I'm making these today!! I'm going to make them chocolate chip, but the oreos sound yummy, too! I'm right there with you - I think the cookie dough is the best part! :)
